Nutritional Yeast Macaroni and Cheese

Macaroni and cheese

  • Cook time: 20 minutes
  • Prep time: five minutes

Ingredients

  • 1 cup yeast flakes
  • 1/2 cup margarine
  • 1/2 cup white or wheat flour
  • 1 tablespoon salt
  • 1 tablespoon garlic powder
  • 3 cups soy milk
  • 1 pound pasta

Instructions

  1. Cook the pasta to taste in boiling water and drain.
  2. Melt the margarine on the stove.
  3. Add the flour to the margarine and stir rapidly.
  4. Continue stirring as you add the soy milk, salt and garlic powder.
  5. Let the mixture cook until it becomes thick and is at a rolling boil. Keep stirring.
  6. Add the nutritional yeast flakes; then remove it from the heat.
  7. Pour the "cheese" sauce over the pasta. Stir and serve.

Variations

To add a little more flavor to the sauce, you can put in soy sauce or mustard to taste. Add more flour for a thicker sauce and more water for a thinner one. This sauce does not keep well in the refrigerator, so it's recommended you use it all the same day.

This bubbly, creamy dip can be served with chips, veggies or even spread on a piece of bread. It has a thick texture and rich taste.

  • Cook time: 25 minutes
  • Prep time: five minutes
  • Oven temp: 325 degrees

Ingredients

  • 1 14 oz. can artichoke hearts in water, drained and chopped
  • 3/4 cup vegan mayonaise
  • 1/2 cup nutrtional yeast
  • 1 clove garlic, minced
  • 1 six ounce can diced green chiles

Instructions

  1. Combine the ingredients in a large bowl and stir well.
  2. Transfer the mixture to a small casserole dish.
  3. Bake for 25 minutes at 325 degrees or until lightly browned.

Baked Kale Chips with Nutritional Yeast

Kale chips

Kale chips are a crunchy and delicious snack on their own. Made with nutritional yeast, they take on another dimension of flavor.

  • Makes two to three servings
  • Prep time: five minutes
  • Bake time: 30 to 40 minutes
  • Oven temp: 300 degrees

Ingredients

  • 1 large bunch of kale
  • 2 tablespoons olive oil
  • 1/3 cup nutritional yeast
  • 1/2 teaspoon salt

Instructions

  1. Tear the kale leaves into one to two inch pieces.
  2. Rinse the leaves well and pat dry.
  3. Place the leaves inside a large bowl.
  4. Pour on the olive oil, nutritional yeast and salt and toss well to coat.
  5. Spread out the leaves in a single layer on a baking sheet and place in an oven preheated to 300 degrees.
  6. Bake for 30 minutes. At this time, begin checking the kale every five minutes. Remove any that are lightly browned and crisp and continue baking those that are still soft. Ovens vary, and so will the ultimate baking times of the chips.
