Classic Carrot Cake
This recipe gives results that are similar in taste and texture to standard carrot cakes.

Cake Ingredients
- 3/4 cup granulated sugar
- 1/2 cup brown sugar, packed
- 2 cups flour
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 3 cups shredded carrot
- 3/4 cup vegetable oil
- 3/4 cup pureed pumpkin
- 2 teaspoons vanilla
- 4 teaspoons egg replacement
- 1/2 cup chopped nuts
Cake Instructions
- Sift together the dry ingredients in a large bowl.
- Mix in the oil, pumpkin, vanilla, carrots and nuts. Stir well to combine.
- Pour into a greased 10 x 9-inch cake pan and bake for 50 minutes at 325 degrees or until a toothpick inserted into the center of the cake comes out clean.
- Let cool before icing.
Icing Ingredients
- 3 ounces cream cheese substitute
- 1/4 cup margarine
- 1 teaspoon vanilla
- 1-1/2 cups confectioner's sugar
Icing Instructions
- Combine all ingredients in a large bowl.
- Beat on high for two to three minutes or until well combined.
- Spread immediately.
Coconut Carrot Cake
The addition of shredded coconut to this carrot cake adds additional flavor and depth.

Ingredients
- 2 cups flour

Cinnamon Icing Ingredients
- 1/4 cup margarine
- 1/4 cup shortening
- 2-1/2 cups confectioner's sugar
- 1 teaspoon vanilla extract
- 1 tablespoon almond milk
- 1 teaspoon ground cinnamon
Cinnamon Icing Instructions
- Combine all ingredients in a large bowl.
- Beat on high for two to three minutes.
- Spread over cooled cake.
Tasty Additions
