Recipe for Lotus Root and Bok Choy Stew

Ingredients
- 8 cups vegetable stock
- 2 tablespoons soy sauce
- 1 lb. lotus root
- 6 cup bok choy, thinly sliced
- 1 carrot, sliced into 1/4-inch pieces
- 6 shitake mushrooms, sliced into 1/4-inch pieces
- 2 cup cooked white rice
Directions
- In a large stock-pot, bring vegetable broth and soy sauce to a simmer over low heat. Add the carrots and allow them to cook for eight to ten minutes.
