  • 1 1/2 cups drained canned chickpeas (1 15-ounce can)

  • 1 garlic clove, finely grated
  • 1 teaspoon salt
  • 1/2 teaspoon fresh pepper
  • 1/4 teaspoon ground cumin
  • 2 tablespoons olive oil

Directions

  1. Place chickpeas, tahini, avocado, lime juice, cilantro, garlic and seasonings in a food processor.
  2. Process mixture until smooth (about 60 seconds).
  3. Slowly add in olive oil and process (another 60 seconds or so) until mixture is light and creamy.
  4. Top with pumpkin seeds if desired (optional), and serve with veggie sticks or pita bread.

Ingredients

  • 4 cups zucchini (grated)
  • 2 teaspoons salt

  • 2 tablespoons olive oil

Directions

  4. Heat oil in a pan over medium heat.

Directions

Ingredients

  • 12 whole mushrooms
  • 1 tablespoon minced garlic

  • 1 cup vegan cream cheese

  • 1/2 teaspoon pepper
  • 1/4 teaspoon onion powder

Directions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Wash mushrooms and break off stems.
  3. Chop mushroom stems into fine pieces.
  4. Sautee stems and garlic in oil in a skillet over medium heat until soft (about 2 minutes).
  5. Let the mixture cool in a medium-sized bowl.
